The Rum Story
From sugarcane to the glass — and why styles differ.
From Cane to Cask
Rum is born from sugarcane — either fresh-pressed juice or molasses, the syrup left after sugar is extracted. It's fermented, distilled, then bottled bright and clear or laid down in oak. Molasses-based rums, common across the Caribbean, tend to be rich and rounded; cane-juice rhum agricole is grassier and more vivid.
Pot, Column & Character
Lighter rums come off column stills; heavier, funkier rums — like Jamaica's high-ester Hampden — come from pot stills. Ageing in tropical heat does the rest, drawing colour and spice from the cask far faster than in cooler climates. Style, still and barrel together shape everything from a crisp daiquiri base to a slow sipping rum.

Sip the aged ones
Treat dark and aged rums like a fine whisky — neat, or over a single large cube to open them up.
Shake & stir
White and gold rums are made for daiquiris, mojitos and mai tais — bright, balanced and refreshing.
Top it up
Dark 'n' Stormy, rum and ginger, or a tall rum punch over plenty of ice for easy sipping.

Rum Cocktails
60ml white rum · 25ml lime juice · 15ml sugar syrup
Shake hard with ice and strain into a chilled coupe.
Make it with white rum →50ml white rum · 25ml lime · 2 tsp sugar · mint · soda
Muddle mint and sugar, add rum and lime over crushed ice, top with soda.
Make it with white rum →40ml aged rum · 20ml overproof rum · 15ml orange curaçao · 15ml orgeat · 20ml lime
Shake with crushed ice, pour unstrained and garnish with mint.
