The Rum Story

From sugarcane to the glass — and why styles differ.

Sugarcane & molasses

From Cane to Cask

Rum is born from sugarcane — either fresh-pressed juice or molasses, the syrup left after sugar is extracted. It's fermented, distilled, then bottled bright and clear or laid down in oak. Molasses-based rums, common across the Caribbean, tend to be rich and rounded; cane-juice rhum agricole is grassier and more vivid.

Pot still & oak casks

Pot, Column & Character

Lighter rums come off column stills; heavier, funkier rums — like Jamaica's high-ester Hampden — come from pot stills. Ageing in tropical heat does the rest, drawing colour and spice from the cask far faster than in cooler climates. Style, still and barrel together shape everything from a crisp daiquiri base to a slow sipping rum.

Good to Know

What is rum made from?
Rum is distilled from sugarcane — either fresh-pressed cane juice or molasses, the syrup left after sugar is extracted. It's fermented, distilled, then bottled clear or aged in oak.
What are the different rum styles?
White and light rums are crisp and clean; gold and amber are lightly aged and smooth; dark and aged are rich and full-bodied; spiced rums are infused with vanilla and spice; overproof and high-ester rums are bold, high-proof and intensely aromatic.
What is overproof or high-ester rum?
Overproof rum is bottled at a higher proof, often around 57% and above. High-ester rums, such as Jamaican pot-still rums, carry an intense fruity, funky aroma — both are prized in tiki and cocktail mixing.
How should I drink rum?
Sip aged and dark rums neat or over a large cube. Use white and gold rums in daiquiris, mojitos and mai tais, and lengthen spiced or dark rums with cola, ginger beer or ginger ale.
