Agave fields, Jalisco

From Agave to Glass

Every bottle begins in the field. Blue Weber agave grows for six to ten years before jimadores harvest the heart, or piña, by hand. For tequila, those piñas are slow-roasted in brick or stone ovens; for mezcal, they're roasted in earthen pits over wood and hot stones — the source of its signature smoke. Fermentation and distillation follow, and for aged expressions, time resting in oak.

Two Spirits, One Soul

Tequila and mezcal are cousins, not rivals. Tequila is made from blue Weber agave, mostly in Jalisco — the highlands give bright, citrus-led spirits, the lowlands earthier ones. Mezcal can be crafted from dozens of agave species across states like Oaxaca, where small family palenques produce intensely characterful, smoky bottles. One polished and precise; the other wild and expressive.

What's the difference between tequila and mezcal?
All tequila is technically a mezcal, but tequila must be made from blue Weber agave in designated regions, mainly Jalisco. Mezcal can use many agave varieties across several Mexican states and is usually smoky, from roasting the agave in underground pits before fermentation.
Blanco, reposado or añejo?
Blanco is unaged and bright for cocktails. Reposado is oak-aged for sipping or mixing. Añejo (1–3 years) and extra añejo (3+ years) are aged longer for rich, neat sipping.
How should I serve it?
Sip aged expressions neat from a copita; try reposado over one large cube; reach for blanco in margaritas and mezcal in smoky twists on classics.
What does “100% agave” mean?
A bottle labelled “100% agave” is distilled entirely from agave. Tequilas without that label — known as mixto — blend agave with other sugars and are usually lighter and more affordable. We carry both, so you can choose by taste and budget.
