The first distillery built on the Isle of Islay for over a century, Kilchoman celebrated its third birthday in September 2009, with its new spirit finally reaching the age required for it to be legally called a single malt. Built using the model of a farmhouse-distillery, Kilchoman makes a point of distilling its new spirit from barley grown on its own land. Some 100 tonnes are harvested and malted at the distillery, providing 30% of their needs. The rest comes from the maltings at Port Ellen. Its first barrel of new make spirit was filled in 2005.

Before it also became a whisky, Machir Bay, the iconic version from Kilchoman, was only the name of a stunning picturesque beach a stone’s throw from the distillery on the island of Islay. This signature single malt is a blend of whiskies that have aged 90% in first-fill ex-bourbon casks and 10% in Oloroso sherry casks. Older every year, this ageless whisky matures like the distillery itself. Highly peaty (50 ppm) and neither chill filtered nor coloured, the whisky is characterised by strong flavours of ash smoke, citrus, and white and tropical fruit, enhanced by a hint of salt. Machir Bay now comes in a gift box with two brand-new glasses designed to reflect the history of the Kilchoman farm distillery, which grows some of its barley on its own land.
