The Double Cask range
Double Cask combines two kinds of sherry-seasoned oak: American oak, which brings vanilla and sweetness, and European oak, which adds spice and dried fruit. The casks are seasoned with sherry in Jerez de la Frontera before being filled at the distillery in Speyside.
The three bottles
The 12 Years Old (40% ABV) is creamy and honeyed, with butterscotch, marmalade and sultana. The 15 Years Old (43%) adds butterscotch, spiced apple crumble, candied ginger and orange peel. The 18 Years Old (43%) is the deepest of the three, with toffee, dried fruit, ginger, clove and a warm oak-spice finish turning to sweet orange.
Tasting them together
Pour small measures in age order, 12 then 15 then 18, and taste each neat before adding a drop of water. The steps show how longer maturation brings more dried fruit, spice and oak.

How does Double Cask differ from Sherry Oak?
Double Cask uses both American and European sherry-seasoned oak, giving a lighter, more vanilla and honey style. Sherry Oak is the richer, more traditional sherried style.
