Kilchoman was founded in 2005 at Rockside Farm on the western shore of Islay — the most westerly distillery on the island, exposed to the full force of the Atlantic — and remains the only distillery in Scotland to grow a proportion of its own barley and perform all stages of production from field to bottle on a single farm site. The Sauternes Cask uses casks from Sauternes — one of the world's great dessert wine regions, producing honey, apricot, and lusciously sweet fortified wine — imparting a uniquely floral-sweet dimension to Kilchoman's characteristic sweet peated spirit. Bottled at 50% ABV, non-chill filtered, natural colour. Tasting Notes
Bright gold with a soft amber glow.
Vibrant and aromatic. Opens with honeyed apricot, ripe peach, and tropical pineapple, followed by lemon curd and barley sugar. Beneath the sweetness lies gentle Islay peat smoke, sea spray, and a subtle mineral edge.
Rich, sweet, and smoky. Waves of Sauternes-driven honey, mango, and candied citrus unfold over Kilchoman’s signature earthy peat. Creamy vanilla, toasted almonds, and soft spice add depth and balance to the vibrant fruit core.
Long, warming, and elegantly smoky. Lingering notes of dried apricot, citrus peel, and honeyed oak fade into gentle ash, sea salt, and soft spice.
