Madre Mezcal Ensamble - 75cl
Madre Mezcal Ensamble is a small-batch mezcal produced in San Dionisio Ocotepec, Oaxaca — a blend ("ensamble") of cultivated Espadín and wild Cuishe agave, distilled together to capture the layered character that comes only from co-fermenting and co-distilling multiple agave varietals.
Both agaves are roasted underground in earthen pits, fermented with wild yeasts in open wooden vats, and twice-distilled in copper-pot stills — the traditional Zapotec method. Ensamble mezcals are prized by connoisseurs for the textural complexity that varietal blending creates.
A more layered expression than single-varietal mezcal — best enjoyed neat in a copita.
TASTING NOTES
NOSE
Aromatic and earthy — roasted agave, soft wood smoke, fresh herbs, gentle citrus, and a clear mineral lift — layered and beautifully composed.
PALATE
Full and complex — sweet roasted agave, soft smoke, vegetal Cuishe character, gentle pepper, and a stony minerality — well-textured with both agaves clearly present.
FINISH
Medium-long and earthy — lingering smoke, gentle herbs, soft agave, and a mineral warmth fading evenly — refined and distinctive.
