The Willett family
Noah's Mill comes from the Willett family's Bardstown business, the same family behind Willett, Rowan's Creek and Pot Still Reserve. The name refers to Noah's Mill, an old building on the family estate.
The whisky
The mash bill is 72% corn, 13% rye and 15% barley, and the spirit goes into barrel at 125 proof. It is bottled as a small-batch blend at 114.3 proof, giving a rich, concentrated bourbon.
How to serve it
Taste it neat first, then add water a few drops at a time; at 57.15% a little water opens up the nuts and vanilla. It also stands up well in an Old Fashioned or a Manhattan.
