TASTING NOTES

COLOUR

Topaz.

NOSE

Firm, powerful. The very medicinal (mustard poultice, mustard) first nose creates a malty block of rare density. We find ourselves beating a path through the fields to fully understand the intensely fruity (Mirabelle plum, pear, lemon), honeyed (lime blossom, lavender) and floral (mimosa, iris) character. Allowed to breathe, sublime spicy (clove, cinnamon, nutmeg) and of course malty aromas propel the aromatic palette into balsamic (cedar, pine) lands radiant with freshness and beauty. Becoming considerably more smooth, with time it becomes increasingly creamy and vanilla. Superb.

PALATE

Concentrated, rich. The attack cedes nothing to the powerful character of the nose. Incredibly rich notes of vanilla appear alongside exotic fruit (pineapple, banana), chilli (Espelette pepper) and empyreumatic flavours (creΜ€me bruΜ‚lée, incense). On the mid-palate, coconut milk spreads across the taste buds, as spices (black pepper, ginger) create a very confident relay. At the end of the palate, barley grains shower the palate.

FINISH

Long, svelte. Lovers of spicy Havana cigars will adore the start of the finish. It is medicinal (pommade, arnica) and also rustic (slightly damp soil) and almost peaty. Casually brushing off these tertiary notes, the end of the palate then gallops toward extremely fruity (apple, kaffir lime, pear) and liquorice registers. The retro-nasal olfaction wavers between vanilla, praline and iris butter. The empty glass returns to the earthy character of the finish, adding cinnamon, milky coffee and aromatic plants (verbena, camomile).
