It was matured mainly in sherry-seasoned European oak, then married in casks from the first 200 seasoned at The Macallan's Valdespino bodega in Jerez.

The Valdespino chapter
Valdespino is a historic sherry bodega in Jerez de la Frontera now owned by The Macallan. This is the first whisky influenced by Valdespino-seasoned casks since that ownership began. The casks were made at The Macallan's cooperages in Jerez and filled in 2024, the bicentenary year.
The whisky
Master Whisky Maker Kirsteen Campbell and the Whisky Mastery Team matured the spirit for 20 years, mainly in sherry-seasoned European oak with a subtle American oak influence, before marrying it in casks drawn from the first 200 seasoned at Valdespino.
How to serve it
Opulent and complex, it is best neat after dinner, perhaps with dark chocolate or Medjool dates to echo the sherry-cask fruit.

TASTING NOTES
NOSE
Sherry-soaked raisins, figs and Medjool dates with frangipane, cinder toffee and caramelised nuts; dark chocolate truffles and warm spice add depth.
PALATE
Opulent and complex: sultanas, dates and apricots, ginger cake, treacle toffee, bramble jam and chocolate-coated cherries, with clove and cinnamon.
FINISH
Warming wood spice, a hint of espresso and gentle oak.
