The 12-pointed Royal Stag

In 1263, Colin of Kintail β€” chief of the Mackenzie clan β€” was hunting with King Alexander III of Scotland in the forests of Mar when an enraged stag charged the king. Colin intervened, killed the stag, and saved the king's life. In gratitude, Alexander III granted the Mackenzies the right to bear the 12-pointed Royal Stag on their coat of arms β€” a heraldic privilege passed down through the clan for the next six centuries.

When the Mackenzie family bought The Dalmore distillery in 1867 from the founding Matheson family, they brought their stag with them. It has appeared on every bottle of Dalmore single malt ever produced since. Today, it is one of the most recognisable emblems in Scotch whisky β€” and a constant reminder of a story that begins long before whisky-making had a single legal licence in Scotland.

Why The Dalmore β€” the distillery

The Cromarty Firth

The Dalmore distillery sits on the northern shore of the Cromarty Firth, near the village of Alness in Ross-shire. It was founded in 1839 by Alexander Matheson, a Highland-born tea merchant who had made his fortune in the Far East. The site is unusually positioned for a Highland distillery β€” directly on the water, with the salt-laced sea air and the soft water of the River Alness shaping every step of production. The combination of coastal influence and Highland fresh water gives Dalmore its trademark depth without the briny aggression of an Island malt.

Flat-topped wash stills

The Dalmore's wash stills are uniquely shaped β€” flat-topped rather than the usual onion or lantern profile, and fitted with cooling water jackets on the spirit stills. The flat tops produce a heavier, oilier new-make spirit; the cooling jackets force more reflux and refine it. The resulting spirit has the weight to take long sherry-cask finishing without being overwhelmed β€” and the depth to support the 25, 30 and 40 Year Old expressions that few distilleries in Scotland can match for consistency and quality at this age tier.

The Matusalem cask β€” Dalmore's defining sherry

What truly defines The Dalmore is what happens after distillation. Master Distiller Richard Paterson β€” one of the longest-serving and most renowned figures in modern Scotch whisky β€” built Dalmore's reputation on a deliberate double-maturation philosophy. Spirit is first matured in American white oak ex-bourbon casks for the bulk of its life, then transferred to rare 30-year-old Matusalem Oloroso sherry casks supplied exclusively to Dalmore by Gonzalez Byass in Jerez.

Matusalem is among the most prized sherry styles in the world β€” a Solera-aged Oloroso averaging over 30 years of cask history before it ever sees Dalmore spirit. The transfer adds layers of orange marmalade, dark chocolate, dried fruit, treacle and oak that Bourbon-cask maturation alone cannot deliver. It is the single most important reason Dalmore's house style is so recognisable, and why aged Dalmore expressions can stand alongside the great sherried single malts of The Macallan while remaining unmistakably Highland.

The Dalmore range

The Dalmore 12 Year Old The benchmark everyday Dalmore. Nine years in American white oak ex-bourbon, three in Matusalem Oloroso sherry. Orange marmalade, vanilla, dark chocolate, soft oak. The reference 12 Year Old and a perfect introduction to the house style. The Dalmore 12 Sherry Cask Select An elegant 12 Year Old Highland Single Malt finished in special sherry casks β€” balancing the nutty depth of Oloroso with the rich sweetness of Pedro XimΓ©nez. The sherry-forward 12 for those who want more cask intensity. The Dalmore 15 Year Old The epitome of the Dalmore house style. Finished in three different aged sherry cask types β€” Apostoles, Amoroso, and Matusalem Oloroso β€” for layered orange, cinnamon, mandarin and dark chocolate. The Speyside-meets-Highland sweet spot. The premium Dalmore gift bottle. The Dalmore 21 Year Old The pinnacle of Dalmore's Principal Collection. Hand-finished in rare 30-year-old Matusalem Oloroso casks selected by the Master Distiller. Long-aged Dalmore at its most concentrated β€” a quarter-century of cask influence layered onto the distillery's signature Highland richness. A serious collector's bottle. The Dalmore King Alexander III Six different cask finishes in one whisky β€” ex-bourbon, Matusalem Oloroso, Cabernet Sauvignon, Madeira, Marsala, and vintage Port. Named in honour of the king who granted the Mackenzie clan its Royal Stag in 1263. A signature expression. The Dalmore Cigar Malt Reserve The cult cigar pairing single malt. Matured in American white oak ex-bourbon, Cabernet Sauvignon barriques and Matusalem Oloroso sherry. Dark chocolate, dried fruit, cinnamon and tobacco β€” the depth needed to stand up to a full-bodied cigar.

The Dalmore vs The Macallan β€” two great sherry-cask traditions

Both Dalmore and The Macallan are sherry-cask led single malts, and both share many tasting notes β€” dried fruit, dark chocolate, oak β€” but they sit in different regions and operate on different philosophies. Macallan is Speyside, drier, more spice-driven, with European-oak sherry casks at the heart from start to finish. Dalmore is Northern Highland, richer, oilier, more orange-marmalade-and-treacle, built on a double-maturation approach with American oak ex-bourbon casks first and rare Matusalem Oloroso sherry casks for finishing. Both rank among the great sherry-influenced single malts in the world; many serious sherry-cask drinkers eventually own bottles from both.

Awards and global recognition

The Dalmore has been a fixture at the top of the world's whisky awards for two decades, with consistent recognition for its long-aged expressions and signature releases. The Dalmore King Alexander III has collected multiple gold medals at the International Spirits Challenge. Cigar Malt Reserve has been repeatedly recognised at the IWSC. The Dalmore 25, 30 and 40 Year Old expressions have placed at or near the top of the World Whiskies Awards aged categories. Dalmore single casks routinely break records at auction β€” including a 1942 cask bottling that sold for over Β£1 million β€” placing the brand in the same collector tier as The Macallan at the highest end of the market.

The Dalmore FAQ

What is The Dalmore?

The Dalmore is a Northern Highland single malt Scotch whisky produced at the Dalmore distillery on the Cromarty Firth, near Alness in Ross-shire. Founded in 1839 by Alexander Matheson and run by the Mackenzie family for over a century, Dalmore is famous for its rich, full-bodied house style, its dedication to long-aged stocks, and its iconic 12-pointed Royal Stag emblem β€” a heraldic privilege granted to the Mackenzie clan by King Alexander III in 1263.

Why does The Dalmore have a stag on every bottle?

In 1263, Colin of Kintail β€” chief of the Mackenzie clan β€” saved King Alexander III of Scotland from a charging stag during a hunt. In gratitude, the king granted the Mackenzies the right to bear the 12-pointed Royal Stag on their coat of arms. When the Mackenzie family bought The Dalmore distillery in 1867, they brought their heraldic emblem with them. The Royal Stag has appeared on every bottle of Dalmore single malt ever since.

What does The Dalmore taste like?

The Dalmore's house style is rich, oily and sherry-cask driven. The signature notes β€” orange marmalade, dark chocolate, dried fruit, vanilla, cinnamon, leather and a long, oaky finish β€” come from a deliberate double maturation: first in American white oak ex-bourbon casks, then finished in rare Matusalem Oloroso sherry casks supplied exclusively to Dalmore by Gonzalez Byass in Jerez. Aged expressions add layers of treacle, antique wood, dark berries and tobacco.

What is special about Dalmore's stills?

The Dalmore runs uniquely shaped pot stills β€” the wash stills have flat tops rather than the usual onion or lantern shape, and the spirit stills are fitted with cooling water jackets. The flat-top design produces a heavier, oilier new-make spirit; the cooling jackets increase reflux and refine it. The combination is what gives Dalmore its signature richness while keeping the spirit poised enough to take long sherry-cask finishing.

What is The Dalmore King Alexander III?

King Alexander III is one of Dalmore's signature expressions β€” a no-age-statement single malt finished in six different cask types simultaneously: ex-bourbon American white oak, Matusalem Oloroso sherry, Cabernet Sauvignon wine barriques, Madeira drums, Marsala casks, and vintage Port pipes. Each cask contributes a distinct flavour layer, and the final blend is named in honour of the king who granted the Mackenzie clan its Royal Stag emblem in 1263.

What is The Dalmore Cigar Malt Reserve?

Cigar Malt Reserve is a single malt designed specifically to pair with premium cigars. Matured in American white oak ex-bourbon barrels, Cabernet Sauvignon barriques and Matusalem Oloroso sherry casks, it carries the depth of dark chocolate, dried fruit, cinnamon and tobacco needed to stand up to a full-bodied smoke. A cult bottle for cigar drinkers worldwide.

How does The Dalmore compare to The Macallan?

Both are sherry-cask led single malts and share many tasting notes (dried fruit, dark chocolate, oak), but they come from different regions and different distillery philosophies. The Macallan is Speyside β€” slightly drier, more spice-driven, with European-oak sherry casks at the heart. The Dalmore is Northern Highland β€” richer, oilier, more orange-marmalade-and-treacle, built on a double-maturation approach with American oak first and Matusalem sherry second. Many sherry-cask drinkers eventually own bottles from both.

Is The Dalmore a good gift?

Yes β€” particularly for whisky drinkers who appreciate sherry-cask depth and aged Highland malt. The 12 Year Old is the entry gift bottle; the 15 Year Old is the considered choice; the 18 is the standard premium gift; the King Alexander III, Cigar Malt Reserve and the 21, 25, 28, 30 Year Old expressions are reserved for the most significant occasions. See our wider gifts selection for presentation options.
