The 12-pointed Royal Stag
In 1263, Colin of Kintail — chief of the Mackenzie clan — was hunting with King Alexander III of Scotland in the forests of Mar when an enraged stag charged the king. Colin intervened, killed the stag, and saved the king's life. In gratitude, Alexander III granted the Mackenzies the right to bear the 12-pointed Royal Stag on their coat of arms — a heraldic privilege passed down through the clan for the next six centuries.
When the Mackenzie family bought The Dalmore distillery in 1867 from the founding Matheson family, they brought their stag with them. It has appeared on every bottle of Dalmore single malt ever produced since. Today, it is one of the most recognisable emblems in Scotch whisky — and a constant reminder of a story that begins long before whisky-making had a single legal licence in Scotland.
Why The Dalmore — the distillery
The Cromarty Firth
The Dalmore distillery sits on the northern shore of the Cromarty Firth, near the village of Alness in Ross-shire. It was founded in 1839 by Alexander Matheson, a Highland-born tea merchant who had made his fortune in the Far East. The site is unusually positioned for a Highland distillery — directly on the water, with the salt-laced sea air and the soft water of the River Alness shaping every step of production. The combination of coastal influence and Highland fresh water gives Dalmore its trademark depth without the briny aggression of an Island malt.
Flat-topped wash stills
The Dalmore's wash stills are uniquely shaped — flat-topped rather than the usual onion or lantern profile, and fitted with cooling water jackets on the spirit stills. The flat tops produce a heavier, oilier new-make spirit; the cooling jackets force more reflux and refine it. The resulting spirit has the weight to take long sherry-cask finishing without being overwhelmed — and the depth to support the 25, 30 and 40 Year Old expressions that few distilleries in Scotland can match for consistency and quality at this age tier.
The Matusalem cask — Dalmore's defining sherry
What truly defines The Dalmore is what happens after distillation. Master Distiller Richard Paterson — one of the longest-serving and most renowned figures in modern Scotch whisky — built Dalmore's reputation on a deliberate double-maturation philosophy. Spirit is first matured in American white oak ex-bourbon casks for the bulk of its life, then transferred to rare 30-year-old Matusalem Oloroso sherry casks supplied exclusively to Dalmore by Gonzalez Byass in Jerez.
Matusalem is among the most prized sherry styles in the world — a Solera-aged Oloroso averaging over 30 years of cask history before it ever sees Dalmore spirit. The transfer adds layers of orange marmalade, dark chocolate, dried fruit, treacle and oak that Bourbon-cask maturation alone cannot deliver. It is the single most important reason Dalmore's house style is so recognisable, and why aged Dalmore expressions can stand alongside the great sherried single malts of The Macallan while remaining unmistakably Highland.
