TASTING NOTES
NOSE
Bright and unexpectedly fruity — a hint of briny coastal air lingers from the Yoichi terroir, but otherwise a vivid bouquet of almond butter, baked apple, fresh bread, and tropical fruit opens up, lifted by a delicate vanilla sweetness and the faintest whisper of the coal-fire distillation character.
PALATE
Creamy and richly textured with almond butter, baked apple, citrus, and a lovely oiliness characteristic of Yoichi's worm tub condensers — spice box, cinnamon, and fresh cigar wrapper notes building gradually alongside a light, fruity sweetness of considerable depth and elegance.
FINISH
Long and gently warming — lemony freshness cleans up a spiced, bready warmth, with the coal-fire smokiness present in texture rather than flavour — a beautifully refined and thoroughly surprising close.
