Waterford Distillery, founded in 2015 by Mark Reynier (who previously revived Bruichladdich), is the most philosophically ambitious new Irish whiskey project in decades β applying wine-world concepts of terroir, provenance, and farm-to-glass traceability to Irish single malt whisky with unprecedented rigour. Biodynamic Luna Edition 1.1 is Waterford's most philosophically radical farming experiment β using barley grown according to Rudolf Steiner's biodynamic farming principles, which treat the farm as a self-sustaining ecosystem governed by cosmic rhythms and lunar cycles. TASTING NOTES
Β Appearance: Apricot gold with oils that are in no rush!
Β Nose: Plums, apricot jam, fresh fruit salad, cold coffee, lemon drizzle cake, milk chocolate with almonds, fresh soil, bread proofing, brown sugar, herbal tea, hay on the ground after a shower of rain.
Β Taste: Spice on every level, front, middle, back and in between, white pepper, cloves, green peppers, jalapenos, dark chocolate, liquorice, malted biscuits and peppermint tea, grapefruit.
Β Finish: An everlasting heat and spice thatβs dry but is mouth-watering, with some mint tea. It has more of a linger and less of a finish.
