Waterford Distillery, founded in 2015 by Mark Reynier (who previously revived Bruichladdich), is the most philosophically ambitious new Irish whiskey project in decades — applying wine-world concepts of terroir, provenance, and farm-to-glass traceability to Irish single malt whisky with unprecedented rigour. Organic Gaia 2.1 is the second edition of Waterford's certified organic single malt — the second chapter in the ongoing exploration of organic barley's contribution to whisky terroir, and an opportunity to observe the vintage-to-vintage variation within the organic programme. TASTING NOTES
COLOUR
Golden peach with super rich and thick oils on the glass.
NOSE
Orange peel, fresh soil, bread crust, brown sugar, milk chocolate, fresh fruit salad, fig roll biscuits, lavender, sweet marshmallows, butter milk.
PALATE
Spicy, white pepper, grapefruit, dry heat, liquorice, cherries, coco powder, wine gums, dry toast, salted peanuts, lemon zest.
FINISH
A dry spice dance that tangos and waltz's like a happy couple into the golden peach sunset.
