Waterford Distillery, founded in 2015 by Mark Reynier (who previously revived Bruichladdich), is the most philosophically ambitious new Irish whiskey project in decades β applying wine-world concepts of terroir, provenance, and farm-to-glass traceability to Irish single malt whisky with unprecedented rigour. Hook Head Edition 1.1 draws on barley grown at Hook Head Farm on the Hook Peninsula in County Wexford β Ireland's most southerly point, where the Atlantic meets the Celtic Sea. The coastal location of the farm gives this SFO a characteristic sea air, minerality, and coastal spice that reflects the dramatic landscape. Non-chill filtered, natural colour. TASTING NOTES
Nose: Mineral and indulgent. Citrus zest, bread crumbs, nutmeg, white pepper, caramel, milk chocolate, salted popcorn, oak, earthy, herbal, and farmyard notes.
Palate: Malty and spicy. Nutmeg, white pepper, salted butter caramel, licorice, ginger biscuit, spicy chocolate, and citrus.
Finish: Long and spicy. While dry, the finish leaves a very persistent oily and spicy character.
Profile: Malty and spicy.
