Waterford Distillery, founded in 2015 by Mark Reynier (who previously revived Bruichladdich), is the most philosophically ambitious new Irish whiskey project in decades β applying wine-world concepts of terroir, provenance, and farm-to-glass traceability to Irish single malt whisky with unprecedented rigour. SFO Lakefield Edition 1.1 draws on barley grown at Lakefield Farm in County Waterford β the farm's specific soil type, microclimate, and barley variety expressing themselves as a distinct terroir character in the finished whisky. TASTING NOTES
Β Appearance: Light gold with oils that grip & legs that slowly meander down the glass.
Nose: Warm custard, bread baking, red apple, milk chocolate, dried flowers, butter cream, pine needles. It reminds me of waiting to eat a rhubarb & apple tart fresh from the oven with custard & cream to hand.
Taste: A gentle clove to start that leads into proving bread & malted biscuits, in the middle a pepperiness that travels back my tongue then honeydew melon & pears.
Finish: It doesnβt, it meanders along like a tributary to the start of a great river.
