First — What Is Rum?
Rum is a distilled spirit made from sugar cane — either pressed sugarcane juice or, more commonly, molasses (the syrupy by-product of sugar refining). The wash is fermented, distilled, and then either bottled fresh (white rum), aged in oak (gold and dark rum), or treated to flavour additions (spiced rum). It's a spirit invented in the 17th-century Caribbean by sugar plantations finding a use for their molasses — and like whisky, it's now made worldwide.
Rum is less regulated than Scotch or Cognac, which explains both its diversity and its bad reputation: anything sweet, brown, and approximately rum-flavoured can be labelled "rum" in some jurisdictions. The Three Schools of Rum

The Perfect Daiquiri
Three ingredients, ice-cold, served up. The classic Cuban daiquiri is the cocktail bartenders use to judge a rum — and a bar. Done right, it's one of the best cocktails ever invented.
- Build the recipe. 60ml good white rum (Bacardi Carta Blanca works perfectly), 25ml fresh lime juice (squeezed within the hour), 15ml simple syrup (equal parts sugar dissolved in hot water, then cooled).
- Use a chilled coupe glass. Pop a coupe in the freezer at least 20 minutes before you intend to drink. A warm glass kills the experience.
- Shake hard with plenty of ice. Add all ingredients to a cocktail shaker filled two-thirds with hard, dense ice cubes. Shake vigorously for 12–15 seconds — until the outside of the shaker is painfully cold to hold.
- Double-strain into the coupe. Use a hawthorne strainer plus a fine mesh strainer to catch every speck of pulp and ice shard. You want a perfectly clear drink with just a thin layer of foam on top.
- No garnish needed. A traditional daiquiri is served plain. If you must, a single lime wedge on the rim — never the cherry-and-pineapple tiki version, which is a different drink entirely.

What's the difference between white, gold, dark and spiced rum?

Dark rum is longer-aged, often with added caramel for deeper colour, fuller-flavoured. Why is aged rum cheaper than aged whisky?
Three reasons. First, rum has less market prestige than whisky, so demand is lower. Second, tropical maturation is faster than Scottish maturation — Caribbean rums age 2–3 times quicker than Scotch, so a 12-year-old Caribbean rum has been ageing roughly equivalent to a 30-year-old Scotch in flavour development, but only carries a 12-year price tag. Third, the rum industry is fragmented, with fewer marketing budgets driving up prices. This makes premium aged rum the single best value in the spirits world right now.
What is Jamaican "funk" or "hogo" in rum?
Jamaican pot-still rums (especially Hampden, Worthy Park, and high-ester Appleton expressions) develop distinctive aromatic compounds called esters during fermentation — producing bold tropical-fruit, banana, pineapple, and slightly funky/medicinal notes. This character is called "hogo" (from the French "haut goût") or simply "funk." It's polarising — some drinkers find it intoxicating, others off-putting. Hampden is the textbook example.
What is rhum agricole?
Agricole is the French Caribbean rum tradition, made from fresh-pressed sugarcane juice rather than molasses. The result is grassier, more vegetal, more terroir-driven — closer to a brandy in style than a typical molasses rum. The main producers are in Martinique and Guadeloupe, but excellent agricole-style rums also come from Réunion (Isautier) and increasingly South Africa (Mhoba). An acquired taste, but a deeply rewarding one once it clicks.
Should I add ice to good rum?
Premium aged rum is best with a single large ice cube or a few drops of water — the cold helps integrate the spirit while a touch of dilution opens up the aromatics. For Foursquare, Hampden, and other high-strength rums (over 50% ABV), water is almost essential. Most everyday aged rums (Diplomatico, Doorly's, Havana Club 7) drink beautifully with a single rock.
