Founded in 1824 on the banks of the River Spey, Macallan was one of the first distilleries in Scotland to hold a legal licence. It built its reputation over two centuries on a single stylistic commitment that most of the industry didn't follow.
The Craft
Where much of Scotch whisky is matured in ex-bourbon casks, the 12 Years Sherry Oak is matured entirely in oak that previously held sherry, sourced from a small number of Spanish cooperages. It's a slower, costlier process — and it's what gives the whisky its dried-fruit and spice character.
The Taste
Rich dried fruit — raisin and sultana — layered with ginger, orange zest and a warming wood-spice finish; the sherry-cask maturation is what gives it that deep amber colour and dessert-like sweetness.

Built in 1923 near Kyoto, Yamazaki was Japan's first dedicated malt whisky distillery — the release that effectively created the category of Japanese whisky as it exists today.

The distillery sits at the confluence of three rivers, on a site historically prized for its water. Combined with an unusually wide range of still shapes and cask types — including Japanese mizunara oak — that water gives the 12 Year Old its layered, incense-and-fruit character.

Dried fruit, coconut and a delicate incense note from the mizunara oak, with a spicy, slightly sweet finish — more restrained and layered than most Scotch of the same age.

Founded in 1715, Martell is the oldest of the major Cognac houses — predating the French Revolution by more than seventy years.
