Understanding PPM β€” Why Phenol Levels Don't Tell the Whole Story

PPM (parts per million) is the standard metric for how heavily peated a single malt is β€” measured at the malted barley stage, before fermentation. While the headline number is useful, it doesn't directly equate to smoke intensity in the finished whisky. The phenolic compounds drop significantly through fermentation, distillation, and especially extended cask maturation. A 20-year-old 50ppm whisky may taste less smoky than a 5-year-old 35ppm whisky.
